Soya is a particularly nutritious leguminous plant that originates from Asia. Pressing its beans produces a mixture of oil and lecithin, which are separated by decantation. It is particularly rich in:
- Phospholipid polyunsaturated fatty acids. It has been proven that a diet in which saturated fats are replaced with unsaturated fats reduces blood cholesterol. A high level of cholesterol is a risk factor in the development of heart disease.
- Choline, which contributes to the normal metabolism of lipids, and to the maintenance of a healthy liver function.
